Looking for a leaner, healthier option than eating delicious lettuce wraps at a restaurant? I’ve got it! This recipe is fantastic AND kid-approved! Best of all it only takes about 25 minutes to cook at home. Enjoy!! Please SHARE if you love it.

INGREDIENTS: 1 pound of boneless, skinless chicken breast, diced 1 cup mushrooms, chopped 1/3 cup scallions, diced 1 package of butter lettuce 2 TBS dark brown sugar 2 TBS soy sauce 2 tsp rice vinegar 1/2 tsp sesame oil IMG_9949

COOKING DIRECTIONS: Add about 2 tablespoons of grape seed oil to a preheated skillet (I used a cast iron skillet because I love the flavor.) Add mushrooms and scallions to preseason the dish and cook for about 30 seconds before adding the chicken. In a separate bowl, mix the brown sugar, soy sauce, rice vinegar and sesame oil and whisk it together until all the ingredients are well blended. Cook the chicken with the mushrooms and scallions for about 3 minutes before adding the sauce mixture. Cook for about 6 – 8 minutes or until the chicken is no longer pink. You can add 1/2 tsp of cornstarch to thicken the sauce and prevent it from running off the lettuce. Place the chicken mix into individual lettuce leaves. IMG_9948 Brussels Sprouts: Cut tips and place on nonstick foil on top of a cookie sheet. Prehead oven to 400 degrees. Drizzle sprouts with grape seed oil or olive oil and salt and pepper to taste. Cook sprouts in oven for about 10 minutes or until the outsides become brown and slightly crispy. I added the sliced tomato at the end and it was super refreshing with all these other foods.
